Chauffeurs de taxi, r\u00e9parateurs, petits commer\u00e7ants partagent tous cet amour pour ce que l&rsquo;on appelle en Occident l&rsquo;infusion du th\u00e9 \u00ab \u00e0 la mani\u00e8re de grand-p\u00e8re \u00bb. <\/p>&#13;\n<p>Mais pourquoi l&rsquo;appelle-t-on \u00ab infusion \u00e0 la mani\u00e8re de grand-p\u00e8re \u00bb ?<\/p>&#13;\n<p>Ce terme est attribu\u00e9 \u00e0 un c\u00e9l\u00e8bre blogueur sp\u00e9cialis\u00e9 dans le th\u00e9, une r\u00e9f\u00e9rence pour les vrais amateurs de th\u00e9, \u00ab Marshal \u00bb, que nous avons eu le plaisir de rencontrer en 2019 \u00e0 Hong Kong. Nous y avons discut\u00e9 de recherche sur le th\u00e9, de sutras du th\u00e9 et d&rsquo;\u00e9tudes sur le th\u00e9, tout en d\u00e9gustant du Puer vieilli et conserv\u00e9 \u00e0 Hong Kong. Voici un extrait de son article de blog : <\/p>&#13;\n<p><em>\u00ab En r\u00e9sum\u00e9, la m\u00e9thode grand-p\u00e8re consiste \u00e0 infuser le th\u00e9 dans une grande tasse, sans filtre, boule \u00e0 th\u00e9, sachet ou autre, avec de l&rsquo;eau constamment ajout\u00e9e, sans tenir compte du temps d&rsquo;infusion ni de la temp\u00e9rature. Les trois seuls \u00e9l\u00e9ments n\u00e9cessaires \u00e0 l&rsquo;infusion grand-p\u00e8re sont les feuilles de th\u00e9, l&rsquo;eau et une tasse, de pr\u00e9f\u00e9rence grande. J&rsquo;ai baptis\u00e9 cette m\u00e9thode \u00ab grand-p\u00e8re \u00bb, car c&rsquo;est ainsi que mon grand-p\u00e8re boit son th\u00e9, et c&rsquo;est l&rsquo;un de mes premiers souvenirs de th\u00e9.\u00bb<\/em><\/p>&#13;\n<p>Cette m\u00e9thode conduit souvent \u00e0 une surinfusion du th\u00e9 (ce que les Chinois appellent \u00ab saveur de soupe cuite \u00bb \u719f\u6c64\u5473). Elle est donc g\u00e9n\u00e9ralement peu appr\u00e9ci\u00e9e des professionnels du th\u00e9 chinois. Cependant, l&rsquo;infusion grand-p\u00e8re peut s&rsquo;av\u00e9rer plut\u00f4t satisfaisante si l&rsquo;on respecte quelques conseils de base.<\/p>&#13;\n<p>Dans cet article, nous privil\u00e9gierons l&rsquo;utilisation d&rsquo;un thermos ou d&rsquo;une bouteille \u00e0 th\u00e9 plut\u00f4t que d&rsquo;un grand verre ou d&rsquo;un verre \u00e0 couvercle, mais le concept est assez similaire.<\/p>&#13;\n<p><strong>Choisissez le bon thermos :<\/strong> Nous recommandons l&rsquo;utilisation d&rsquo;un thermos en verre borosilicate, qui semble mieux conserver la chaleur. Nous privil\u00e9gions \u00e9galement les thermos en m\u00e9tal plut\u00f4t qu&rsquo;en plastique. Assurez-vous qu&rsquo;ils soient bien ferm\u00e9s. Les meilleurs sont ceux dot\u00e9s d&rsquo;un bouton verseur qui \u00e9vite de devoir ouvrir le couvercle au risque de gaspiller ar\u00f4mes et chaleur.   <strong> <\/strong><\/p>&#13;\n<p><strong>Infusez la bonne quantit\u00e9 de feuilles de th\u00e9 :<\/strong> La m\u00e9thode la plus simple consiste \u00e0 utiliser un tiers de la quantit\u00e9 d&rsquo;eau d&rsquo;un gaiwan avec trois fois plus d&rsquo;eau. La quantit\u00e9 exacte d\u00e9pend enti\u00e8rement de votre th\u00e9 ; demandez donc \u00e0 votre fournisseur ou, comme nous le disons toujours, essayez, essayez encore, jusqu&rsquo;\u00e0 trouver le bon ratio eau\/feuilles. <\/p>&#13;\n<p><strong>Contr\u00f4lez la temp\u00e9rature de l&rsquo;eau :<\/strong> Utilisez d&rsquo;abord de l&rsquo;eau bouillante pour que les bourgeons et les feuilles de th\u00e9 s\u00e9ch\u00e9s soient bien impr\u00e9gn\u00e9s et infus\u00e9s ; pour la deuxi\u00e8me \u00e9tape de l&rsquo;infusion, pr\u00e9f\u00e9rez une temp\u00e9rature d&rsquo;eau plus basse : 90-95 \u00b0C en hiver, 60-65 \u00b0C en \u00e9t\u00e9.<\/p>&#13;\n<p><strong>Apprenez \u00e0 conna\u00eetre votre th\u00e9 :<\/strong> la premi\u00e8re infusion \u00e0 la mani\u00e8re de grand-p\u00e8re ne sera probablement pas excellente, mais cela ne signifie pas qu&rsquo;elle est impossible.
